While offsite backup will help you recover your data in the case of an emergency, a good business continuity plan will include having an alternate office location where your key staff can continue to work if your primary office is unavailble for normal operation (be if fire, flood, power or internet outage etc).
While your staff are on their way to the 'spare' office, the computers and phone systems will be programmed with your standard configuration so your staff can just sit down and continue working.
